where do you want to go?
I’m nomadic by nature; wanderlust is in my veins. Portugal to Egypt to China to the comfortable ease of Provence and every corner in between, I can think of very few places I don’t want to go. That said, right now I’m drawn to Scandinavia, probably born out of my interest in surreal landscapes, Elder Futhark runes, & nordic chefs. If I had my way I’d spend a few months trekking through Iceland, Denmark, Finland, Sweden, and Norway.
what do you want to eat/drink while you are there?
I wouldn’t be able to visit Scandinavia without visiting Faviken & Noma. Those two restaurants are virtual culinary pilgrimages, and Chef Magnus Nilsson & Chef René Redzepi are both endless sources of inspiration and not just a little bit of awe. I would spend the entirety of my time eating as much seafood as possible, but I especially need (yes, need) to try Nilsson’s signature dish: fresh scallops smoked over juniper branches.
your favorite place to see and savor?
I’m drawn to places in the world where the veil is thin. Ancient forests, precipitous mountains, and megalithic tombs. Ley lines and holy land. I’m also, of course, drawn to places with a rich culinary culture & vibrant local food movements. The place I’ve found in the world that has all of this and also happens to feel like a second home is Ireland. Spiritually it resonates with me like a bell, and the food we had during our travels there was remarkable. Ireland is very closely tethered, still, to farm life & the countryside, and I want to savor everything they have to offer: Burren Smokehouse salmon, Cashel Blue & St. Tola cheeses, homely brown bread, and foraged treasures like chanterelles, wild garlic, elderberry, nettle, seaweed, and sloe. I’m smitten with every facet of that country: the people, the food, the landscape, and the mystical vibrations. I can’t wait until I have the chance to return!
