labor day has passed and they say that summer is ending, but really la has been the hottest all summer the last week. i just sit at home and sweat… literally. it’s so hot i’ve been sleeping with an ice bag and night i can’t handle it. any opportunity i get to leave to house to find some ac for comfort i jump to the occasion. right before the madness of the heat began i made some peach lime mint fruit rolls. these are super tasty, so easy to make and fun for kids. no added sugar just fruit, some lime and mint! happy september!
PEACH LIME MINT FRUIT ROLL print this recipe!
INGREDIENTS
3 cups of peaches – cut into chunks handful of mint leaves 1 lime zest juice from 2 limes parchment paper |
PREPARATION
1. preheat the oven to 200º. put peaches, mint leaves, lime zest and lime juice in a blender and process until smooth.
2. on a sheet pan with parchment paper, pour the mixture onto the pan and spread evenly with a spatula. place in the oven for 5 to 6 hours or until it is dry.
3. cut the fruit roll into strips, roll and store in an airtight container or enjoy immediately! keep the parchment paper on if you are storing it – i like to keep mine in the fridge!
