i remember the first time i tried a gluten free baked good. my friends and i were checking out the ever so popular baby cakes – i distinctively remember my first bite and being so disappointed. i guess i just imagined that it would taste exactly like a regular cupcake just ‘better for me’ but i’ve come to realize that the texture and consistency of gluten free goods is quite different. i haven’t been back to baby cakes since i’ve incorporated a lot more gluten free paleo eating into my diet but i think i will try again soon.
anyhow, my friend george from civilized caveman makes a delicious banana bread that’s sugar free, gluten free, and paleo. the best part? the first time i tried it i couldn’t even tell it was missing the sugar.
i decided to bake these banana breads in smaller loafs in an effort to prevent me from eating the entire loaf at once – hope you all give it a try!
BANANA BREAD recipe from civilized caveman
4 bananas (it works if they are yellow, but i prefer ripe bananas)
4 eggs
1/2 cup almond butter
3 tablespoons of coconut oil melted
1/2 cup of coconut flour
1 tablespoon of vanilla
1 1/2 tablespoon of cinnamon
1 teaspoon of baking soda
1 teaspoon baking powder
pinch of salt
1 cup of walnuts
- preheat oven to 350º
- in a blender combine all wet ingredients and mix well
- once all of the wet ingredients are combined, add in all the dry ingredients minus the walnuts
- coat your loaf pans with some coconut oil and fill the pans a little more than 2/3 full – these will not rise as much as a regular loaf so you can fill it a bit higher
- top the loafs with some walnuts and baked for 40-55 minutes or once a toothpick comes out clean
- remove from oven, transfer to cooking rack and enjoy!
