i pick up a few magazines when i travel and subscribe to a food magazines at home but i find that most of the times i just salivate over the photos. i never really make anything from the magazines – i’m not quite sure why it is, perhaps it’s because some of the recipes always look more challenging that i want for a simple meal at home. i found this grilled halibut recipe in time’s issue of “what to eat now” – seemed simple and easy so i gave it a go!
GRILLED HALIBUT WITH MANGO SALSA recipe adapted from time magazine
SALSA
1 1/2 cups coarsely chopped mangos
1 cup chopped red pepper (medium)
1/3 cup fresh arugula
1/4 lemon juice
4 teaspoons shopped fresh oregano
1 garlic clove, minced
½ habanero pepper seeded and minced
salt to tast
FISH
4 teaspoons fresh lemon juice
4 teaspoons olive oil
1/2 teaspoon paprika
1 garlic clove, minced
4 skinless halibut fillets
salt and pepper to taste
1. combine all of the salsa ingredients, toss gently and let stand for 30 mins.
2. preheat grill (i used a stovetop grill pan)
3. combine lemon juice, olive oil, paprika, and minced garlic into a large shallow dish stirring with a whisk. add fish to juice, turn to coat and let stand for 15 mins.
4. remove fish from marinade, sprinkle fish evenly with salt and pepper. cook each side for 3 mins or untol fish flakes easily. serve with salsa!
